A Killer In Your Fridge

Usually when I start a fast I become obsessed with food. So early this morning I cleaned up my fridge and then I rememberd that book about health and children. And the frightening propect of germs looming around. Listeriosis? or if you prefer ?Listeria? Listeriosis being the illness caused by ?listeria monocytogenes?, a bacteria. It starts with flulike symptoms, fever and chills. Sometimes an upset stomach and when the bacterial infection spreads to the nervous system, you get headaches, stiff neck and even convulsions. The illness is on the rise in USA and in most countries where processed food is eaten on a regular basis. 25% of the contaminated patients die from it. Of course most people don?t get it. Nevertheless, elderly people, pregnant women and newborns are at risk. Also in danger: persons with weak immune systems due to: cancer treatments, diabetes, AIDS... Listeria is found in soil and water, hence in animals and dairy products. So to be safe from listeria, here are a few tips: We now know that it can grow in your fridge, and even survives to the temperature of your freezer but intense heat is lethal. Ready cooked food are supposed to be thoroughly cooked, and they are, but may be contaminated on their way to your plate. ALWAYS WASH YOUR HANDS IN HOT SOAPY WATER . IDEM FOR CUTTING BOARDS ETC. AVOID UNPASTEURIZED DAIRY PRODUCTS. RE-HEAT PROCESSED FOOD ( deli-meat, lucheon meat, hot-dogs etc.) AND LEFTOVERS; In your fridge, separate read-to-eat food from veg. and fruits.
