Facts about Carrots                       Alka Gaur                                 The carrot is a very popular   vegetable which is more nutritious when eaten raw. The botanical name of carrot   is Daucus carota and In Hindi its called Gajar A member of Parsley family ,it   has green feathery leaves which are  rich in vitamins, proteins and   minerals. Carrot was first grown as a medicine and not a food. The name Karoto   was given to carrots by the ancient Greeks. The heaviest carrot recorded in the   world was 18.985 lb. in the year 1998 and the longest carrot recorded in 1996   was 5.14 meters (16feet 10 inches).Carrot flowers are also called Bird''s nest   and Bee''s nest. The edible root is dark orange, light orange or blackish maroon   in colour.             Nutritive food value:             A handful of raw baby carrots give sufficient vitamin   A   which the body and eyes require for the whole day. The deep   orange colour indicates that the carrots are loaded with Vitamin A.             Beta carotene:      The carrots have the highest content of vitamin A of all the   vegetables .The vitamin A present is in the form of beta carotene which is an   antioxidant and helps in preventing cell degeneration. Anti-oxidants also slow   down the ageing process .The name carotene, which is in the form of pro-vitamin   is derived from the word carrot. Carotene is a health promoting phytochemical   which gives carrot the orange colour.The carotene is converted into vitamin A   by the liver and is stored in the body. .If a carrot is eaten raw the system   absorbs only 1% of the available beta carotene but if a glass of juice is taken   then it absorbs 99% beta carotene.             Vitamins and minerals:             Carrots are rich in vitamin c, small amount of vitamin B   complex, calcium, phosphorous and iron. Carrot juice is very rich in so many   minerals, that it is considered to be a miracle juice.                    Natural benefits and curative properties:             ·          Carrots are good for the skin and   beneficial in the treatment of a rough and dry skin.      ·          Anti-carcinogen properties in Carrot   juice helps to prevent cancer. It is a belief that it has cancer-curing   properties also.      ·          It cures constipation. the juice of a   carrot is very effective in removing constipation. Add 4-5 tsp of spinach juice   in a glass of carrot juice and to it squeeze half of a lemon.      ·          Increases immunity-Carrot juice is   considered to be a health tonic and increase the immunity to 60% if 2 glasses   of juice is consumed daily.       ·          Raw carrot if eaten daily cleans the   teeth, prevents bleeding of gums and removes all harmful germs in the mouth.      ·          Carrots purify and revitalize the   blood also.             Great ways to eat carrots:             Carrots can be used in a variety of ways. They are more   helpful when eaten raw as during cooking a large amount of nutrients are lost.   Making a salad or juice is more advisable. Grated carrots can be used in making   sandwiches, ,cakes , cookies etc .Baby carrots make a wonderful snack and are   also used in Chinese preparations. Thus we can say that carrots are one of the   best sources of vitamin A. So what are you waiting for? Grab a handful of   carrots or gulp down at least a glass of fresh carrot juice  daily as it   increases the water intake.
