The Origin Of Cornflakes
(Dorothy Eaton Watts)
THE ORIGINAL OF CORNFLAKES Grains are part of the original diet given to man on the day of his creation. Grains along with nuts, fruits, and vegetables were given to man by his Creator as the best food for his health and long life.Today everyone knows the importance of whole grains in the diet. They supply needed carbohydrates, minerals, vitamins, and proteins for a healthy lifestyle. Whole grains also provide necessary bulk and roughage for efficiency of digestion and elimination. However, this was a new concept in 1901.The diet in those days in the United States consisted mostly of bread made from white, refined flour, potatoes, white rice, and lots of meat and fat. Dr. Kellogg at Battle Creek Sanitarium saw the importance to find ways to feed his patients whole grains. In 1878, soon after his arrival at Battle Creek, he came up with a food called granola, a combination of roasted grains, which he fed to his patients. At first the granola was very hard to chew and digest, but Dr. Kellogg continued to refine the product as the years went by.Then one day, one of his elder patients became upset when she broke her false teeth trying to chew the granola. She demanded to see the doctor.?Look what happened from trying to chew your granola!? the woman snapped, showing him her broken set of dentures. ?It is your fault they are broken, It will cost me ten dollars to get a new set and I expect you to pay for the new set!?Dr. Kellogg wondered what he could do to avoid such confrontations in the future. Then one night he dreamed of a way to make flaked food. Early the next morning he jumped out of bed, put on some whole wheat kernels to boil. Then they were soft, he drained them and spread them on the counter, rolling the paper thin flat with a rolling pin. He then had the flattened kernels baked in an oven. They came out crisp and were easily crumbled. They became soft when served with milk or juice.Dr. Kellogg thus invented wheat flakes. Made with bran they became bran flakes. Made with con they became corn flakes. Today the name of Kellogg is found on boxes of corn flakes, wheat flakes, bran FLAKES and many other boxed cereals. That is the Kellogg name of early Adventist history, the doctor from Battle Creek Sanitarium.Since Dr. Harvey Kellogg refused to register his invention or to market it, his brother undertook to do it. For many years, the signature of W.K. Kellogg was on all Kellogg cereal boxes.
