The following is taken from an article incorporated in the book.Are u thinking of hosting a memorable party to your pals, but somewhere deep within, quiver at the tension involved to satisfy their palates? Here?s how you can keep your cool without getting hassled and tensed:1)At the very offset, make a guest list about a week in advance, keeping a few couples in reserve to replace the ones who might politely convey their likely absence. The guest list should be limited to the number you can handle at ease.2)Once you are sure of the number, make the interesting menu keeping in view their food preferences. Plan an elaborate meal if you have a couple of dear friends with a lending hand, otherwise make it simple but balanced.3)Include items with different flavors and colors. Don?t place too many tomato-based dishes on the table which appear similar to the eye and the dishes with similar spices or herbs. In short, seek for variety. Use moong or green gram dal in the menu as this is the quickest and lightest dal.4)Once you are through with planning the menu, shop for them. You can also buy canned stuff after reading the labels.5)Don?t wonder if I?d say to start cooking a couple of days before. Yes, basic spice powder/paste can be stocked well in advance. This will surprisingly save precious time on the final day. A day earlier, you can cook the meats. This way they even taste better. Chores like boiling spinach and grinding, baking cakes, boiling eggs, mashing boiled potatoes, peeling and grinding of ginger, grating coconut, slicing almonds, roasting peanuts, shelling peas, grating corn, cutting vegetables like carrots, beans, cabbage and storing them in zip lock bags and refrigerating may all be worth preparing before. At this point half your job is done. After all, the goal of the very exercise is to keep the laborious part of the cooking out of mind on the final day when you need to attend to many other trivial things which cross your mind on those last minutes.6)On the party day, resort to that last minute cooking like decorating the dessert, making salad, cooking the dish which you think tastes best when cooked fresh. Look around the house, decorate the corner that needs attention, arrange some flowers for that fresh look, and lay the table creatively. Also take out the crockery, cutlery, knives, glasses, dessert bowls, serving dishes, forks etc and wash them and arrange them on a side table creatively. Flat platters are best for rice, dry vegetable, or chicken.7)Take out the paper napkins if the group is informal and linen ones if it is not. They can be kept in a napkin holder.8)Another thing to bear in mind in case you are serving a baked dish-is to remember to keep a heat resistant mat on the table. 9)Just before the guests arrive, put all the curried dishes out and heat them directly or on a microwave oven for that piping hot look.10)Once the guests receive your welcome, lay out some snacks and appetizers, put some soft and soothing music, dim the lights, place some floating candles and de- stalked flowers on wide container filled with perfumed water.
